This is definitely one for the foodies! On Friday the Glam joined others in celebrating the launch of a new pop-up menu at Trader’s Vic.


Vanessa Bolosier, author of Creole Kitchen, collaborated with London’s iconic bar and restaurant. Following the success of her  book, Vanessa continues to share her love for Caribbean-Creole food. “This is home food,” she said to us. In the absence of ingredients which can easily be found throughout the Islands, “everything has to be made from scratch…[in some ways] I think this is better,” Vanessa explains as she continues to tell us about the variations of food throughout the Caribbean. “You don’t find [many of these foods] here.” Caribbean food is not limited to Jerk chicken and rice and peas. (Shall we repeat this again for emphasis?) Cuisine from the Islands have so much more to to offer. Culture and history are so intrinsically dependant on food and the varieties are inexhaustible.

We then continued our discussion with a brief  consideration of what the term Creole means. Over time and history, the meaning has evolved and changed; its meaning may also differ depending on which part of the world you are in. “It’s a mix,” Vanessa explains, primarily “between French and Caribbean” in the context of her food. As with the culture itself, her menu consists of a unique blend. Each spice and seasoning tantalises the tastebuds in such a complimentary way. The tension between spicy and sweet work so well together.

The menu consists of things like Salt Fish Fritters, Mango Souskai, an original 1972 recipe for BBQ Spare Ribs, Goat Colombo, Rum Ice Cream and Mont Blanc Cake.

This truly delicious menu will be available until August 11th. It’s the perfect destination for a romantic date, an over due catch up or to celebrate the end of a week of hard work.
